This week we finalized our chart plotter install by mounting the transducer in wax on the inside hull of the boat, we test our marine stove’s oven by cooking up some delicious buffalo mini chicken sandwiches, and we go for a sail on a beautiful early fall day.

Mini Buffalo Chicken Sandwiches:
Ingredients:
1 12-pack dinner rolls
2 tablespoons butter
3 tablespoons hot sauce
1 1/2 cups shredded chicken
1/4 cup brie cheese cut into small pieces
1/4 cup crumbled blue cheese
1/4 cup thinly sliced celery
1/2 teaspoon celery seeds
Directions:
1. Preheat the broiler.
2. Split the whole pack of attached dinner rolls in half.
3. Place the top and bottom halves cut-side up on a baking sheet.
4. Broil until toasted, 1 to 3 minutes.
5. Remove from the oven and preheat to 400 degrees F.
6. Melt the butter with the hot sauce in a pan over medium heat.
7. Toss the chicken with butter/hot suace mixture.
8. Spread the chicken mixture evenly on the bottom bread piece.
9. cover with cheeses and celery.
10. Cover with the top bread piece.
11. Bake until the bread is toasted and the cheese is melted, 12 to 15 minutes.
